Plant-powered oleogel: rapeseed oil structured with plant proteins to replace hydrogenated/trans and saturated fats. (Olga Degtyarenko)

Over 60% of cosmetics rely on fossil-derived or animal fats, while edible fats are packed with trans and saturated lipids that contribute to obesity, diabetes and cardiovascular diseases, killing one in three people globally. Plant oils, rich in polyunsaturated fats, offer a sustainable, bioactive alternative; however, their fluidity and oxidative instability drastically limit their applications in food, cosmetics, and pharmaceuticals.

We present an innovative platform technology that enables protein self assembly into nanofibrils, structuring liquid oils into stable oleogels at low protein concentrations, without the need for heating, toxic solvents, nickel  or expensive cross-linkers. Through a sophisticated process which unlocks protein oleogelating capacity, we bring firmness and structure to liquid oils, serving the diverse needs of industries that touch every aspect of life.
